Hollyberry Joins BUILD St. Louis!

Hollyberry Baking and Catering has joined a St. Louis organization focused on supporting our economy by BUYING LOCAL!  Hollyberry currently makes our own efforts to buy local in our Catering division by locally sourcing bread, produce from farmers markets, and other items.  Hollyberry has also introduced its SHOW OFF ST. Catching you up on Hollyberry news!

So much has happened since my last blog -here are a few media highlights:
++We were voted Favorite Caterer in St. Louis by Sauce Magazine readers! (we served our Buffalo Chicken Dippers at the Celebration Gala at the Four Seasons - it was fabulous!)
++Our Dave’s Double Chip Cookies were Snack of the Day on the Rachael Ray Show this Summer (of all the yummies we sent her she picked our Chocolate Chip cookies which was quite a compliment!)
++Our Corporate Gift Crates featuring our own Gooey Butter Cake and other sweets are featured in the “Gifts We Love” section in Paula Deens Special Collector’s Edition Holiday Baking Magazine!

We are so thankful and thrilled by these mentions, but most of all we are excited about the upcoming holiday season.  We are getting the amazing opportunity to help put people in our community back to work by partnering with the St. Patrick Center in downtown St. Louis to help mentor and train those less fortunate in our community to help us with this year’s gift production.  St. Patrick Center’s mission is to promote “Permanent, Positive Change” and we are getting to be a part of it!

Taste and Touch has arrived!

After a year of working and re-working the program, we have launched a new Customer Touch Program called Taste and Touch.  The idea is that if you need to connect with your prospects and clients regularly but can’t seem to get to all of them in a meaningful way - we can help!  The program is VERY simple - you can download our options on line and even fill out the spreadsheet online and get it back to us.  http://www.hollyberrybaking.com/TasteAndTouch.html

Imagine your top clients receiving an amazing box of made-from-scratch sweets with a personal note from you out of the blue!  (and it will cost YOU less than a lunch with 1 person!).  You can send just a couple of cookies to a main contact or smaller customer, or a larger package to a big opportunity or larger office!  You choose the size gift and frequency - we take care of the rest.

Post Season thoughts and thankfulness


So, we all got through another holiday season, and despite the doom and gloom everything turned out pretty well here at Hollyberry.  The most unique thing to me was the fact that most of the small to mid-sized companies still gave appreciation gifts, and still held their holiday parties.  Larger companies were the ones who were cancelling here and there.  I suppose that makes sense given the typical priorities of smaller companies - we understand that in harder times the thing to NOT cut from the budget is our expressions of thankfulness. 

In fact, in the spirit of that idea, we are launching a new “thank you” customer touch program called Taste and Touch that will be a repeatable, effective way to say thanks even more often than once a year.  Call me a maverick (a great 2008 word!), but I think there are plenty of people like me who realize that the 80/20 rule works, and who understand the importance of staying in front of your best clients -
all year long.

Here’s to a thankful and profitable 2009 - May God bless you all.

The Economy and Holiday Gift-Giving

As I was in Starbucks this morning, probably the 10th person in the last few days asked me how my business was doing, with a solemn expression on their face.  Actually we are doing well, but I understand where they are coming from with all the hype from the media about the economy.  However, I thought of 2 things that hopefully will help our corporate gift business stay healthy during this period:

1) Why would anyone STOP giving gifts and saying thank you to the people who ARE giving them business? and
2) Why would anyone want to risk their own customers’ confidence with re: to the health of their own organization?

We hope that even if you have to scale back on giving that you give us a call - we can work with nearly every budget and still provide you with a cozy and personal way to express appreciation this holiday.

Glad tidings to all this season and remember that this is the perfect time to give thanks for what we DO have in our lives.

Late-night Pie Baking

The other night I was up late with a 2nd burst of energy and realized I had 2 employees with birthdays the next day.  Whenever I can, I like to try and make something for them myself, so I decided on a pie.  But, it was 10:00pm and I had barely any fruit.  So I started paging through one of my favorite Sweet cookbooks (pillsbury - The Complete Book of Baking) and found a berry pie that used frozen berries!  I know, not my preference either, but I have to say - a heck of a lot easier and for this pie it worked great!  Here is the modified recipe, which I used my mother’s homemade crust which is amazing, but not the easiest to work with, so feel free to use a shell if you are not feeling ambitious:

Hollyberry’s Triple Berry Pie:

Heat oven to 425

2 cups sugar
1/4 cup cornstarch
2 cups frozen berries (I had some cranberries and strawberries in my freezer)
1 16 oz pkg frozen blueberries (could be substituted with black or raspberries)

Pre-made or:
2 1/2 c flour
1 t salt
3/4 Crisco

Streusel topping:
3/4 cup flour
1/2 cup packed brown sugar
1/2 t cinnamon
1/3 cup melted butter

In large saucepan, combine all filling ingredients.  Cook over medium-high heat until mixture boils, stirring constantly.  Reduce heat; simmer until mixture is very thick.  Cool 15 minutes.

While cooling, prepare crust mix by blending 1st 2 ingredients with pastry blender until crumbly. 
Add 4 T COLD water, use blender to mix
Make dough into 1 ball, flour surface, and roll it our to fit your pie pan.  Use any extra dough to line the sides and pinch all around edges.  Pour in cooled filling.  Mix streusel topping and crumble on top.  Bake about 35-45 minutes or until slightly brown and bubbly.**Put cookie pan on oven rack below where you put pie in case of boiling over!

Optional final touch:
Whip real whipping cream (small container is fine) until it forms soft peaks.  Add sugar and vanilla to taste.  Add a dollup of sour cream and lemon or orange zest if you have it and blend well.  Serve over pie.

Our Gift Gala was a smash!

Hello there from Holly,


I wanted to say thank you to everyone who was able to make it to Hollyberry’s very first Gift Gala, introducing our 2008 Holiday Gift line. It was a wonderful success. We had a beautiful Indian Summer evening, and our guests enjoyed getting an sneak peek at all of Hollyberry Holiday Gifts, from the tried-and-true favorites (Lemon Heaven is a recipe from our first year in business!) to the brand new creations like our cookie sandwiches we call Sweetie Pies. We baked up batches and batches of every variety of Hollyberry Sweets just for the occasion, and by the looks on people’s faces, they tasted pretty good!

Last Wednesday was also my 35th b-day, and October marks our 10th year in business — so the Gift Gala was a great way to celebrate! Towers of Gooey Butter Cake, stacks of Sweetie Pies, and heaps of our new Gingerbread Kettle Korn and Dark Chocolate Toffee Pistachios decorated Hoffman LaChance Contemporary Fine Art Gallery (one of our FAVORITE places for catering events!!). In addition, guests noshed Rosemary Balsamic Chicken and Shredded Pork with spiced apple on Harvest Crisps, along with a Savory Cheese Spread.
